  1. 1/3 cup almond flour
  2. 1/4 cup honey (optional) see tips
  3. 1/4 teaspoon cinnamon, nutmeg, pumpkin pie spice
  4. 1/3 cup pumpkin puree
  5. 2 eggs
  6. 1/4 teaspoon baking soda
  7. 1/3 cup pecans
  8. pink himalayan salt


  1. 3 bowls
  2. combine dry ingredients and put in bowl 1
  3. Combine egg yolks, pumpkin and honey in bowl 2
  4. Bowl 3 has just egg whites
  5. Mix pumpkin bowl
  6. Add pecans
  7. Add pumpkin bowl to dry bowl
  8. Whisk egg whites until peaks form
  9. add into pumpkin and mix
  10. Put good oil on skillet
  11. bake up pancakes
  12. enjoy- add grass fed butter or cream cheese– No maple syrup

Honey is not needed for this. I try and avoid honey and maple syrup at all costs. It is almost pure fructose and goes straight to fat. Stevia is much better and doesn’t have any carb impact. PLUS you don’t even need the stevia, it’s delicious on its on.

I try and mix and match this recipe a lot. So play a round with it. Will have some more videos of what i do as well.

I also try and use coconut flour or flax seed flour because the almond flour tends to be higher in omega-6 fatty acids which too much of those can be inflammatory. So I try and limit my servings to 2 or less. If I do get more then that I usually will eat more omega-3’s either via supplement or seafood or both.
